
I am very lucky to be able to come home for lunch...but whenever I walk in my apartment and know that I have 30 minutes to A) Cook lunch B) Do the dishes C) Take the Dog Out D) Pack up the old Netflix and E) Pay the Electric Bill I suddenly become frazzled and wonder why I always think it is so relaxing to come home for lunch?!?!
But I've come to really enjoy the process of trying to cook a healthy (and fast!) lunch from the very random ingredients in my fridge -- everyday is like a pop quiz -- "What can I make using tofu, carrots, and tomato sauce?!?" Today I whipped up a pretty delicious lunch calling on all the odds and ends I had hanging around.
White Bean, Tofu and Sweet Onion Saute with Arugula:
1 small sweet onion
1/4 cup of white beans
1/2 cup of pine nuts
1/4 cut of tofu (I used savory flavored)
1 cup of arugula
1 lemon wedge
Salt & Pepper
Saute the onion in olive oil over med/high heat so it caramelizes on the edges. Toss in the white beans and let them get crispy. Then toss in the pine nuts and tofu -- cook for a few minutes until everything is heated through and toasty. Salt & Pepper.
Toss the arugula with lemon and slide the saute on top - if you mix it together the arugula begins to wilt and it is all really creamy and delicious!
