What's For Dinner?? How About Tacos!!!!

I love tacos (and most foods that get wrapped in a cozy blanket: bahn hoi, fajitas etc.) and make veggie tacos a lot. My inspiration and love of veggie tacos started at our favorite "west coast stylin' mexican food" place in Providence

The photo above is of roasted sweet potato tacos -- I have the process down and so it is very easy and quick to whip them up. All I do is simmer red kidney beans in some salsa (Trader Joe's salsa auténtica is my favorite) then mush up the beans with the back of my fork. While that's going on, I roast the sweet potatoes with just olive oil, salt, and pepper. Mix some avocado with salt, lime juice, and cilantro -- throw it all together with some more salsa on top and devour.

The tacos below are a "spring-ey" version compared to the fall-themed sweet potatoes. Instead of sweet potatoes, I roasted summer squash and corn together then made a quick slaw of purple cabbage (lime juice, salt, olive oil) and topped with the same quick guacamole and salsa. Oh and threw fresh tomatoes on top - twas the season. Yummmm.
