Couscous with Roasted Sweet Potatoes & Pine Nuts
I know what you're thinking... More sweet potatoes? Well, yes. In my defense, they're my favorite ingredient for a reason. Delicious, good for you, colorful, and seasonal - just to name a few.
This couscous recipe is quick and incredibly yummy! Only 5 real ingredients and just 5 minutes to cook the couscous.
1 box whole wheat Couscous (sub quinoa for G-F)
2 large sweet potatoes, cubed
4 large shallots, sliced
1/2 cup pine nuts, toasted
6 cloves garlic, chopped
Red Pepper Flakes
Slice the shallots and cube the sweet potatoes. Toss in olive oil, salt, and red pepper flakes (if you like a kick), and roast at 425 until they start to caramelize.
While the sweet potatoes are roasting:
Chop the garlic and slowly saute in olive oil until soft. Don't let the garlic brown or it will become bitter. (I do the garlic separately because it would burn if you put it in with the sweet potatoes.)
Cook the couscous according to the box. (Boil some water, throw in the couscous, take it off the heat and let it sit for about 5 minutes.)
Toast the pine nuts in a dry pan over medium-low heat until they start to brown.
When the sweet potatoes are ready, toss them with the couscous, garlic, and pine nuts.
