I was craving hot chocolate and since the Swiss Miss variety is now solidly off-limits (not to mention that there are animals in marshmallows), I whipped up some vegan hot chocolate. It was delicious, easy, really fast, and definitely hit the spot. You'd never guess it was vegan!
8 oz. vanilla soy milk
1 teaspoon* raw sugar
2 teaspoons unsweetened cocoa powder, the darker the better
Heat everything together in a sauce pan, whisking until the cocoa powder and sugar are dissolved and the hot chocolate is, you guessed it, hot.
*add more sugar if you like it sweet
