Merry Christmas Eve! More from our Christmas Eve feast...
I decided to mix two spicy greens - watercress and arugula - that would make an exciting salad and not just a plate filler. Both the arugula (real arugula, not the "baby arugula" that comes in a plastic container and has no flavor) and the watercress and peppery and spicy and went well with the tart grapefruit.
I sectioned the grapefruit then squeezed the juice from the core into my balsamic vinaigrette. Later we tossed the greens and grapefruit with toasted walnuts and the dressing. Yum!
For the salad:
1 bunch arugula, well rinsed and dried
1 bunch watercress, well rinsed and dried
1/3 cup walnuts, toasted
2 grapefruits, sectioned
For the dressing:
1/2 cup balsamic vinegar
1/3 cup fresh grapefruit juice
1/3 cup fresh lemon juice
1 teaspoon honey
1/3 cup extra virgin olive oil
1 teaspoon salt
To make the dressing, reduce the balsamic vinegar in a saucepan until thick and syrupy. Whisk in the honey and the grapefruit and lemon juices. Slowly whisk in the olive oil and season with salt.
