For a long time I thought I didn't like corn tortillas. Silly me! These white corn tortillas from Trader Joe's are amazing - and the real corn flavor beats a chewy flour tortilla any day. I'm such a corn tortilla convert I'm pretty much an honorary member of the EZLN.
1 onion, diced
2 red bell peppers, diced
2 large sweet potatoes, cubed
Hot chili flakes
Toss the red peppers, onions, and sweet potatoes in olive oil, salt, and garlic powder and roast at 450 until they begin to brown.
Schmear some avocado on each tortilla and sprinkle it with salt.
Pile the soft pepper/potato/onion mixture onto the tortilla.
