I prefer blondies to brownies, I don't mean I think Jessica Simpson is cooler than Sophia Bush, I'm talking desserts! I love all the combinations of things you throw in blondies to make them your own.
I know this isn't exactly a health food but sometimes you need to indulge a little. I cut these blondies into teeny tiny little bite sized squares so you don't feel like you're overdoing it by treating yourself. And you can alway transform the recipe into something more nutritiouss (reduce/replace butter, sub out white flour, etc.) but I was in the mood for straight up goodness.
I found this traditional recipe online and adapted it to include my favorite tidbits: coconut, dark chocolate chips, wanuts, and oats....yummm.
8 tablespoons butter, melted
1 cup brown sugar
1 teaspoon vanilla or 1/2 teaspoon almond extract
1 cup all-purpose flour
Butter an 8×8 pan
Mix melted butter with brown sugar - beat until smooth. Beat in egg and then vanilla.
Add salt, stir in flour. Mix in any additions.
Use one or a combination of:
Coconut, chocolate chips, oats, peanutbutter chips, nuts, swirl of marshmallow (not the kind made with gelatin from animal bones!), fudge, peanutbutter, splash of coffee (the list can go on and on...)
Pour into prepared pan. Bake at 350°F 20-25 minutes, or until set in the middle. I always err on the side of caution with baking times — nobody ever complained about a gooey-middled cookie. Cool on rack before cutting them.
Since these little treats are called BLONDIES I though it was appropriate to include some of my favorite Blondies, and yes I'm talking people now...

Me & Erin-We were actually members of the infamous Vineyard band "Blondie" - we had a one-hit wonder called Tiny Dancer (I was the seamstress for the band).
Oh weird....how'd she get in here??
