Kyle & Kate stopped by on Wednesday night, for just such a visit, so I quickly threw together some snacks for us. In typical charming Kyle fashion he brought along some Weihenstephan Beer - which is brewed in the oldest brewery in the world (opened in 1040!)
This goat cheese spread is creamy, salty, and full of fresh flavors (tomato, olive oil, dill). It is so easy to put together and is a total crowd-pleaser. And, what a great excuse to use the beautiful handmade cheese knifes Kyle made/gave us as a wedding gift!
Goat Cheese w/ Sundried Tomatoes & Dill
1 8 oz. log of goat cheese at room temperature
1/4 cup sundried tomatoes, packed in olive oil, chopped
2 tablespoons dill
Top cheese with sundried tomatoes and sprinkle with dill. Serve with crackers, crusty bread, or vegetable crudette.
Hi S & N! It's K & K. After reading this blog we are ready to move in with you guys and eat vegetarian every night! (okay, kate is anyway!) We are definitely going to try some of this stuff, to see if we can wean Kyle off of a diet of pastries and red meat. see you guys soon!
