Grilled Pizza Party!

Let the Summer festivities begin!

On Saturday night, we had a grilled pizza party on the Vineyard. Thinking it would be really fun to each make an individual personal pizza we prepared a ton of topping options, Nick grilled up all the crusts, and then everyone put their pizza creativity to work.

Grilled Pizza Party!
3 balls of store-bought pizza dough (or if you're up for it make your own!)
*You can go to your favorite pizza shop and ask for dough-to-go
1 large can whole San Marzano tomatoes
1 1/2 tablespoons sea salt
1 batch Two Blue Lemon Pesto
1 pan roasted veggies (1 red pepper, 1 orange pepper, 1 summer squash, 1 zucchini)
1 large yellow onion, caramelized (see below)
1 can artichoke hearts (in water) chopped
1 tablespoons capers, drained
2 cups shredded mozzarella cheese
Parmesan cheese

To Start:
-Unwrap the dough, place in 3 small bowls covered with a moist dish towel (to avoid growing a crust), let sit for at least an hour to proof and come to room temperature
-Make the pesto
-Slice up all the veggies, toss in olive oil & a sprinkle of salt, and roast on 400 for 15 minutes
While the veggies roast...
-Caramelize the onion: slice thin and saute on medium with 2 tablespoons of olive oil (stirring only a few times) until deep brown and soft (about 20 minutes)
-Dump the whole tomatoes into a large bowl, add the 1 1/2 tablespoons of salt and crush up with your hands
*Nick learned that not only are San Marzano tomatoes the b-e-s-t but whole tomatoes are really the bees' knees because lower quality tomatoes are thrown into the crushed bins while the most pristine fruits are kept, and sold, whole.
-Preheat grill to highest setting (trying to emulate a hot pizza oven)
-Cut each big ball of dough in half, making 6 mini-balls, roll out with flour (and muscle)

Once the grill is hot, oil the grill (not the dough) so nothing sticks. Grill 2 pizza shells at a time, for about 3 minutes a side - work through all 6 shells.

Once the shells are grilled up, top with whatever you want! I basically loaded everything on - pesto, tomato sauce, artichoke hearts, grilled veggies, caramelized onions, capers, and cheese!

Put your pizza back on the grill (turned down to medium), with the lid closed, for a few minutes to melt the cheese and warm everything up together.
*Finn smells pizza in the air...

Slice. Sit on Porch with Beer. Eat.
