Beets are one of my favorite edible parts of summer. At some point (50 years ago?) they got a bad rap, but it's wholly undeserved! Beets are delicious, sweet, crunchy, and beautiful. They're also quite good for you: folic acid, manganese, potassium, fiber, and iron - and that's not even the whole list!
I grabbed some red and yellow beets and roasted them, then tossed them in Blue Lemon Pesto. Yum! Beet greens are tasty too, so don't toss 'em.
2 red beets
2 yellow beets
1/4 cup Blue Lemon Pesto
1. Preheat the oven to 450.
2. Peel the beets using a vegetable peeler or small knife.
3. Cut the beets into matchsticks.
4. Toss in olive oil and salt, and roast until they begin to brown.
5. When the beets come out of the oven toss them in a few spoonfuls of pesto.
