Abundancia del diablo (a.k.a. Devil's Bounty)

Sister Lemon and I were in need of a quick lunch on Friday and threw this together with what we had in the fridge. Always the best way! This salad is really quick to put together and so fresh, refreshing, and satisfying. The mango adds the perfect hint of sweetness to compliment and balance the smoky cumin dressing, and the fresh corn and red pepper give it a great crunch that goes really well with the soft beans, mango, and avocado. The kicky Lime Cumin Vinaigrette was the perfect dressing. Smoky cumin, bright lime, and a bit of heat from the garlic.

This would also make an amazing dip for tortilla chips, or served over brown rice, quinoa, or fresh arugula. All the credit goes to Sarah for the idea. The only thing this salad needs? A name!!

For the salad:
1 can black beans
1 red bell pepper
1 ear of fresh corn
1 mango
1 avocado

For the cumin dressing:
1 clove garlic
1/2 small shallot
1/2 teaspoon cumin
Cayenne pepper, to taste
Juice and zest of 1 lime
1/4 cup olive oil

1. Make the salad: Dice the red pepper, cut the corn off the cob, drain and rinse the beans, cut the mango and avocado. Mix together in a large bowl.
2. Make the vinaigrette: Use a microplane to zest the lime and mince the garlic. Dice the shallot as finely as possible. Whisk everything together in a small bowl, or combine in a mason jar and shake to emulsify.
3. Toss the salad and vinaigrette. Enjoy!
