Wild Rice Salad w. Radicchio, Apricots & Walnuts



The last few nights here on the Vineyard have felt like Fall, cool and crisp - the quilts are out of the chests and our beach trips have been replaced with long trail walks around the island. Our mom headed back to teaching this week, Anna is dusting off her books to start Grad school, and my professional life is changing. Although there are still officially 25 days of Summer left, it feels like a new season is rolling in, bringing exciting changes along with it.

This wild rice salad is the perfect dish to transition from building sandcastles to picking apples. If you're still on vacation, you can pack it up for a delicious beach lunch or if it's back to school for you, make a big bowl of it for easy, no stress lunches.

Wild Rice Salad w. Radicchio, Apricots & Walnuts
1 cup wild rice
2 cups water
pinch salt

1/2 head of radicchio, sliced into thin ribbons
1/2 cup dried apricots, sliced
1/2 cup toasted walnuts, chopped
2 tablespoons chopped fresh herbs or greens (parsley, watercress, spinach, whatever you like)

1 small or 1/2 large garlic clove, grated on microplane or minced very finely
juice 1 lemon
4 tbl extra virgin olive oil
1/2 tea salt & freshly ground black pepper

Cook rice as per package instructions - typically 30-50 minutes for wild rice with the ration 1:2 (rice to water). Let cool.
Chop radicchio, apricots, walnuts, and herbs/greens.
Make dressing by whisking together garlic, lemon juice, olive oil, salt & pepper.
When rice is cool, toss everything together.

This salad is delicious right away, but is also very good the next day and next next day. Best served at room temperature. Enjoy!

    Kelly-Good question! I used a wild rice mix from the bulk bins wall at our grocery store. It had a mix of short brown rice and long grain wild rices, very yummy! You can really use any rice you like - I'm partial to the chewey long grain wild rices myself.

  4. I LOVE the wild rice mix at Trader Joe's. It has a really nice blend of different grains and the taste is awesome. Not to mention that Trader Joe's is always a bargain!
