"See You Next Summer!" Sandwiches

It's time to (sigh) kiss your Summer tomatoes good-bye and set your sights on Fall treats. But we can't let these little beauties go without a proper farewell, a Last Supper (or in this case lunch), dedicated to the season's quintessential fruit.

As I tossed green, orange, and red tomatoes into my bag yesterday at the Providence Farmers Market I was suddenly confronted with the realization "This could be it!" So, today for lunch, Nick & I decide to eat our last batch of tomatoes in our favorite way, as a simple sandwich.

"See You Next Summer!" Sandwiches:
your favorite crusty/chewy bread (I used Seven Stars' Olive Loaf & Nick used Olga's classic baguette)
2 summer fresh tomatoes, sliced thin
fresh mozzarella, sliced thin (I used Maple Brook Farms')
handful of basil leaves, washed & left whole
1 garlic glove, whole
extra virgin olive oil
balsamic vinegar
salt & pepper

Rub slices of crusty bread with the garlic clove to pass on a garlicky flavor. Drizzle olive oil & balsamic vinegar over the bread - top with tomato slices, mozzarella rounds, and basil leaves. Sprinkle with salt & pepper.
