Noodle Salad with Mango

Operation lose baby weight!

Nobody wants to be on a diet because "dieting" means eating bland boring food, right? Au contraire! The best diet food is fun to make, full of flavor, satisfying, and beautiful to look at. This noodle salad is the perfect thing to get my pre-baby jeans out of the bottom drawer and back on my bottom.

Noodle Salad with Mango
1/2 cup light brown sugar
1/3 cup fresh lime juice
1/4 cup low-sodium soy sauce
2 garlic cloves, minced
1 red jalapeno chile, finely chopped

8 oz dried rice noodles
1 large carrot, cut into thin strips (or grated)
1/2 cup thinly sliced fresh basil leaves
1/2 cup thinly sliced fresh mint leaves
1/2 English cucumber, halved and sliced
1 cup bean sprouts
1 green onion, thinly sliced
1 large ripe mango, peeled and sliced
1 cup cubed grilled tofu (I cheated and bought this at Whole Food's prepared foods bar but feel free to prepare your own, or leave it out)
1/2 cup cilantro leaves
1/2 cup roasted peanuts, crushed

1. To make dressing: Warm all ingredients in pan over low heat until sugar dissolves, stirring occasionally. Cool.

2. To make Salad: Cook noodles per package instructions. Rinse under cold water. Toss noodles with all ingredients and dressing, reserving cilantro and peanuts to sprinkle on top.

  2. I LOVE this recipe and this blog! I am not a vegetarian, but these recipes all look so good that I just had to try this salad last night. Wow, hubby and I enjoyed it so much. It tastes like a fresh Vietnamese spring roll, without the shrimp. I have not had a salad this good in a very long time. This was outstanding. Thank you!

    PS What kind of rice noodles are those? I have the pho and rice vermicell kind in the cupboard..

  7. i've made this twice now and it's so good! although, i guess my version is a little different but i owe it all to you guys, YUM.

    for the dressing i just thin out some whole foods peanut sauce with soy, fresh lime juice, and olive oil or a red wine vinegar/water/sugar/salt mix which i use to pickle red onions (and i use those when i don't have scallions.)

    i also use whole wheat spaghetti and orange bell pepper. point is, it's so versatile and i love the mango (a fruit i'm not so crazy about otherwise) with the saltiness.
