Citrus Salad with Feta & Mint

Remember when I said 11 of my friends are pregnant? Well slowly babies are being born and I'm basking in a spring filled with baby showers and newborn clothes shopping. Women, brunch, tiny PJs, beautiful decorations and food - this is my kind of thing.

On Saturday Elizabeth and I threw our friend Christine a little bash to welcome her second son. We couldn't let this new little guy slip under the radar!

I made a couple of spring quiches and this citrus salad the morning before the shower, with a toddler at home, which attests to the simplicity of the recipe.

Citrus Salad with Feta & Mint:

4 pieces of citrus, peeled and cut into thin slices - I used 2 grapefruits and 2 oranges
1 shallot, thinly sliced
4-ish tablespoons feta cheese, crumbled
2-ish tablespoons fresh mint, chopped
2 tablespoons olive oil
1 tablespoon honey
big pinch salt and a few grinds of pepper

Easy - whisk olive oil, honey, salt, and pepper together. Lay citrus slices on a large platter. Sprinkle with shallots, feta, and mint. Drizzle over dressing and serve.
