"See You Later" Grilled Orange Halibut

I refuse to use the term goodbye. I can't say goodbye to this place where our friends live up the street, where our favorite olive bread is baked, where Dylan's favorite sandboxes live, where our baby was born, where the village that supported me as a new mom appeared. I am only going to say see you later.

I'm leaving with a very idealistic memory of Providence. I already don't remember any of the bad days here. I'm sure when I think about it months, years, decades from now I'll still only remember my favorite faces, routines, and the first days (make that years) with my boy.  

To take my mind off things I suggest you grill this strikingly beautiful fish Memorial Day weekend. Here's how to do it.

Grilled Orange Halibut
serves 4

2 oranges, sliced
1 lemon, juiced
4 tablespoons olive oil
3 teaspoons grated fresh ginger
3 teaspoons honey
1/2 teaspoon salt
black pepper
4 (6-ounce) halibut fillets

We ate this with roasted rainbow potatoes and a simple arugula salad. 

Combine everything besides the fish fillets in a large dish. Mix around and squish the oranges a bit to let out some juice.

Add fish and toss gently to coat. Stack the orange slices on top of the fillets and let marinate in the fridge for a couple hours.

Heat your grill then oil it to prevent sticking. I use a paper towel dipped in olive oil.

Place orange slices and fish on grill. Turn after 4-ish minutes or until you think it looks good. If the fish is sticking to the slates it isn't ready to flip.

Serve fish with grilled orange slices for extra juicy squeezing.

Just to add fuel to my sentimental fire, here is Dylan's first day at home and our big boy sitting in the same spot two years later. Miss you already.

We just moved back to MA ourselves (2 weeks ago), I know you are going farther away so Provy won't be as accessible...but Providence will certainly be on the losing end of this deal. After several weeks of take-out and frozen pizza, I made the butternut squash quesadillas for dinner tonight to get myself back on track...thanks for your great service!

  2. This post made me teary, even as the food made me salivate. Danielle and Sarah- both of you leaving me!! In utter disappointment, my oven caught fire on me the other day. On fire. Guess that's a hint that we should do more grilling this summer...So more of those posts please, Mrs. Waldman. :) And lots of pics of D.

  3. Sarah, I tried the grilled oranges with some grilled veggies and they were wonderful! Great idea! I've only grilled pineapple and watermelon before!
