Parmesan Asparagus Fries & It's a....

Everyone in the state of Massachusetts has their own personal connections to the attacks in Boston this week. For us, we were in Boston yesterday for a very happy medical appointment. We were told a beautiful and healthy baby boy will join our family in September and make us a male dominated crew and I couldn't be happier.

Our life changing news, full of excitement and smiles, was delivered just floors away from some of Monday's victims. When we were leaving the hospital the President's motorcade pulled up - at least fifty vehicles and full swat team descending upon the hospital for the President to visit and support the recovering victims and staff at the hospital.

So this is the face of a big brother and I sure hope my boys will enjoy a peaceful world together. 

In celebration of spring, I made these delicious and addicting Parmesan Asparagus Fries. Yum yum. 

Parmesan Asparagus Fries

1 bunch asparagus
3 tablespoons olive oil
sea salt
3/4 cup fresh Parmesan cheese

1. Preheat oven to 425 F.

2. Trim the asparagus ends to where the spears naturally snap. Toss spears with olive oil and salt. 

3. Arrange asparagus in a single layer on a baking sheet and roast for 20-30 minutes or until crisp around the edges. 

4. While asparagus roasts, grate Parmesan cheese onto a large tray. Roll roasted asparagus spears in cheese, gently shake off excess, and lay on a clean platter. 

5. Allow cheesy spears to rest slightly so Parmesan adheres, about 5 minutes, then gather a bunch pieces and place in parchment paper cones for festive serving.
